Cinnamon Biscuits

 


I’ve been doing some more baking recently and thought I would share it. I used a recipe from ‘Mary Berry Fast Cakes’ and would recommend both the recipe and the book. Page 210 if you have a copy. I was quite pleased with the results, and my brother made some positive remarks.

I’d been looking for a cinnamon biscuit recipe for a while and I found these had a lovely flavour without being too sweet. I would bake these again as I enjoyed making and eating them. I’m slowly making my way through the baking books I own trying to complete as many recipes as possible. I might revisit these in autumn as cinnamon is perfect for that time of the year.

Autumn Bake With Me: Choc & Hazelnut Cookies






It’s soon going to be the beginning of autumn! I love baking this time of year; it’s one of my favourite pastimes all year through but there’s something so cosy about it in autumn.

I’ve done a couple of bake with me posts previously but today I’m sharing chocolate and hazelnut cookies. I used the toll house cookies recipe from Mary Berry’s Fast Cakes baking book as a guide but tweaked it a little, adding hazelnut’s, raisins and swapping sugar to a sweetener.

These cookies came out pretty well, the combination of chocolate, nuts and raisins worked nicely. Also on another note my Mum bought a reusable baking sheet, which I used here; I recommend them if you are wanting to be a little more eco-friendly.

Autumnal Baking: Spicy Baked Apple

So recently I’ve been in the kitchen doing some autumnal baking, and just to let you know I have a few related posts lined up. If you are a long time reader of my blog, you probably know I have quite a sweet tooth and since chatting to my dentist I’ve decided to cut sugar out of my diet where I can including thinking a bit differently about snacking.


I absolutely enjoy my baking, and saw this as a new creative challenge, to see what I could come up with which is just a touch more healthy. I think this was my first bake with this in mind and we are lucky enough to have an apple tree in our garden so at the beginning of autumn, I made a few things with the apples.



I used the spicy baked apple recipe from my trusty Easy Peasy baking book by Mary Contini as a guide to create an apple dish. I’ve never done a recipe like this before but there wasn’t really a lot to it, other than chopping up the apples, and putting a bit of spread, spices, sultanas, and nuts on the top with just a slight sprinkle of sugar to sweeten then popping it in the oven.



The result was surprisingly effective, the red in the apples made the dish look pretty and the taste was great too, particularly with adding a bit of spice. It would be a perfect healthy alternative to toffee apple to serve around Halloween/Bonfire time to warm you up, adding natural yogurt or no added sugar custard.

Autumn Bake With Me: Vanilla Cupcakes


I often do baking content on my blog but it’s been a good while since I’ve done a photo diary of this so I thought I would revisit that idea. Today I’m going to be sharing how I made vanilla cupcakes which is a very easy bake and one where I could do a photo diary with more ease. I used a recipe from The Hungry Student Baking book by Charlotte Pike. The recipes are great in there and a perfect way to introduce yourself to baking.

Although the mixture went in the oven a little runny I didn’t need to worry as they cooked perfectly fine and the finished cupcakes were tasty and moist. I’ve recently been thinking about how to decrease my sugar intake and if I were to do this recipe again I might try swapping the sugar for sweetener. I have some ideas in my head ready to be put into action as well as some I’ve already done for more healthy bakes so stay tuned!
